My title sounds a little different than my other Happy Foodie posts. Ate Weng’s not known for her cooking skills but she has a specialty: Kalabasa Maja. It’s a healthier version of Maja Blanca (coconut pudding), my personal favorite. It’s really yummy and, surprisingly, easy to make.
Ate Weng is generous enough to share the recipe with everyone.
1/2 kilo squash
4 cups coconut milk (gata)
3 tablespoons cornstach dissolved in 1 1/2 cups of water
1 can cooked corn kernels
1 cup sugar
1. Boil the squash until soft.
2. Once soft, mash the squash.
